My 2016 New Year’s Resolution

As the year comes to a close, many spend this day reflecting on the last 365 days and all the joys and trials they have experienced. Me, well, I’m spending the day trying to get caught up on life and wrapping my brain around the fact that another year has FLOWN by! I guess the saying is true… “life is like a spool of thread, the closer you get to the end, the faster it goes!”

My new year’s resolution has been the same for the last three years and I’m going to continue it for 2016 – Read the entire Bible cover to cover. It is my goal to make this my resolution each year for the rest of my life. I’ve been a Christian since I was 9 years old and I’ve gone to church my entire life, but until 2013 I had never read the entire Bible. I had always brushed it off by proclaiming myself as “not a reader”, but the team chaplain for the Colts changed that. He asked me to join a group to read The One Year Bible. I told him that I wasn’t a reader and made a few excuses about being a mom and traveling, etc. Then he told me something I’ll never forget. He said, “God gave you his word in book form, you need to become a reader.” Ouch! Point taken. So, I began to read The One Year Bible on January 1, 2012 and I made it to… February and quit. The next year I yearned to start over. I used a plan I found online and accomplished my goal at the end of 2013. It just so happened that 2013 was one of the worst and best years of my life. I was diagnosed with cancer, my grandmother who I was very close to passed away and near the end of the year I became pregnant with our baby girl. God knew I needed to be grounded in his word that year, and I’m SO thankful I was. Y’all it is only by God’s grace that I can keep this up because much to my mother’s dismay I am *still* not a reader.

There are lots of plans for reading through the Bible. The One Year Bible is a very popular one, but I just can’t jump around to different passages. If I jump from Daniel in the lion’s den in the Old Testament to Paul in prison in the New Testament, my brain goes crazy and I can’t compartmentalize what I’m reading. So, I chose to read from cover to cover, Genesis to Revelation. I found a plan online and re-typed it in 2013. I wish I could give credit to the original creator. All I remember is that I got it off a church’s website. So… sorry and thank you!

I would love for you to join me in reading the Bible in 2016! It only takes 15 minutes a day. If you get behind (like I often do), just double up a few days and you’ll be caught right back up. Just print out the pdf below and get started tomorrow morning. I promise you won’t regret it!

One Year Bible Reading Plan

The picture of my babies below totally sums up their personalities right now. Luke can’t stand take a pictures and Lyla just wants him out of her way. Even though she’s the baby, she thinks she is the boss! I can’t wait to see how they grow and change next year!

I hope you all have a wonderful start to 2016!

Tamale Pie Recipe

I meant to post this recipe on Tuesday for Cinco de Mayo, and well, that didn’t happen! While we don’t really celebrate this Mexican holiday, we certainly celebrate Mexican food! It’s one of the Tamme family favorites. I made this tamale pie for our family last week and it was a hit! I had made it once before, but it was even better this go around! It’s a super easy dish to throw together and is oh, so good!

I found this recipe on Pinterest in the wee hours of the morning while I was rocking Lyla. I’m not sure what moms did before iPhones when they were up all night with their babies, but I can’t imagine not having mine! I shop, read my Bible, shop, peruse Pinterest and Instagram, shop… Anyway, this recipe is from Skinny Mom and calls for reduced fat versions of everything. We don’t really believe in low-fat items in our house (other than 2% milk, which we rarely drink), so I use full fat versions and it works just fine.

Also, if you haven’t seen how to make Slow Cooker Shredded Chicken, you should really check it out here. It’s seriously life changing! I make a batch on Sundays and it lasts us most of the week. It’s great to throw on salads, make chicken noodle soup or this tamale pie.

Tamale Pie (from Skinny Mom)

12 ounces boneless chicken breast cooked and shredded (see link above)
10 oz red enchilada sauce
2 eggs
1/3 C. milk
1 can cream style corn
4 oz. can diced green chiles
1 packet of taco seasoning
1/2 tsp. red pepper flakes (you can omit this if you don’t like the heat)
1/2 C. shredded cheese, Mexican Blend
1 box Jiffy cornbread mix
chopped fresh cilantro

  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine skim milk, egg whites, ½ Tbsp taco seasoning, red pepper, cream-style corn, corn muffin mix and green chilies.
  3. Stir ingredients until moist and then transfer mixture into a round pie plate coated with non-stick cooking spray.
  4. Bake at 400 degrees for 20-25 minutes. Corn cake will be done when golden brown.
  5. While corn cake is baking, toss shredded chicken with remaining 1 Tbsp taco seasoning in a small bowl.
  6. Remove corn cake from oven and pierce generously with fork, making indentations all over corn cake.

Corn cake fresh from the oven. I’m always tempted just to eat this before adding the rest of the ingredients!

  7. Pour red enchilada sauce over pierced corn cake.
  8. Top enchilada sauce with chicken and sprinkle with cheese.
  9. Bake at 400 degrees for 10-15 minutes until cheese is melted.
  10. Remove from oven and let stand for 5 minutes.
  11. Top with fresh cilantro  before serving.IMG_8675

Don’t forget that Saturday is the last day to enter the Children’s Book Week Giveaway! We’ve had lots of entries so far and I’m so excited to see who will win! You have to get your comment in by midnight on Saturday and I will be announcing the winner on Monday, May 11th!

Children’s Book Week Giveaway!

Children's Book Week Giveaway

Today is the first day of Children’s Book Week and to celebrate I’ll be hosting Everyday Allie Rae’s first giveaway!

While I don’t read much as an adult, I loved reading as a child. I find that now if I read my Bible each day that’s just about all the reading I’m able to fit in. However, we read LOTS of children’s books every single day! Thankfully, both of our kids love to snuggle up and read and we love it too!

This week I’ll be giving away four of our family’s favorite books to one lucky winner: Little Blue Truck, Go, Dog. Go!, Dear Zoo and The One Year Bible Devotions for Preschoolers. If you would like to enter but don’t have small children, feel free to enter and you can donate them to your local library or preschool.

We have lots of favorite books, but these are the ones that we’ve read so much that we can recite them from memory. Of course, we haven’t memorized the devotional book, but we try to read it each night with Luke. It includes a short devotional, a Bible verse (usually a condensed verse) and a short prayer. It’s really a great way to end each day!

To enter the giveaway, leave a comment with your favorite children’s book. I’ll be choosing the winner at random on Monday, May 11th. The giveaway will end on Saturday, May 9th at midnight EDT.

Good Luck and Happy Reading!
